Root for Horseradish
Banish the summer-time blahs with horseradish, commercially-prepared or fresh-grated in your kitchen.
- A dollop of this high-powered root herb will wake up your breakfast tomato juice or scrambled eggs.
- At lunch, add a spoonful to such deli items as potato salad, cole slaw, or baked beans, and use to spice up deviled eggs.
- For supper, mix a bit into the mashed potatoes or the sour cream on your baked potato, or add to ranch or French dressing for a lively salad.
- As a zesty snack, fill celery sticks with a mix of one cup avacado and two teaspoons horseradish. Sprinkle with paprika.
According to the Delphic oracle (and who wants to dispute an oracle?): The radish is worth its weight in lead, the beet its weight in silver, the horseradish its weight in gold.
